​It layers juicy segments of orange and grapefruit with buttery avocado, tender shrimp, and the bold punch of fresh coriander, all resting on a bed of leafy greens. A crumble of salty feta brings it all together, making this salad feel special enough for guests but easy enough for lunch at home.

INGREDIENTS

  • 1 ripe avocado, diced
  • 1 medium orange, peeled and segmented
  • 1 medium grapefruit, peeled and segmented
  • 150 g pre-cooked shrimp, peeled and deveined
  • A handful of fresh coriander (cilantro), chopped
  • 4 cups mixed leafy greens (arugula, baby spinach, or a spring mix)
  • ¼ cup crumbled feta cheese

Optional Dressing (simple & fresh):
  • 2 tablespoons olive oil
  • 1 tablespoon citrus juice (from the orange or grapefruit)
  • ½ teaspoon honey or maple syrup
  • Salt and pepper, to taste

Prep Time: 15–20 minutes
Cook Time: None (just assemble)

Light, zesty, and bursting with fresh flavour. Juicy orange and grapefruit segments are layered with creamy avocado, tender shrimp, fresh coriander, and crumbled feta over a bed of leafy greens — a vibrant salad that’s perfect for sunny days when you want something quick, nourishing, and refreshing.



INSTRUCTIONS


Prepare the fruit:
Segment the orange and grapefruit over a bowl to catch any juice (you can use this for the dressing!). Set the segments aside.

Make the dressing (optional):

In a small bowl, whisk together olive oil, citrus juice, honey, salt, and pepper until smooth. Adjust to taste.

Assemble the salad:

On a large serving plate or bowl, layer the leafy greens as the base. Scatter over the shrimp, avocado, citrus segments, and chopped coriander. Sprinkle with crumbled feta.

Dress and serve:

Drizzle the dressing over the salad just before serving. Serve immediately while everything is fresh and vibrant.

💡 Tips & Variations
  • Want a little heat? Add a pinch of red chili flakes or finely sliced red onion.
  • Swap shrimp for grilled chicken or chickpeas for a different protein option.
  • Use lime juice instead of citrus for a more Latin-inspired twist.
