Endive Salad with ham, apple and raisins 

Makes 2 to 3 servings
Prep time: 10 minutes


INGREDIENTS
3 Endive heads, chopped 
2 Tbsp raisins 
100 g cooked ham, diced 
100 g strong cheese such as gorgonzola or mature cheddar, chopped or crumbled
1 apple, cored and chopped
2 Tbsp olive oil
2 teaspoons cider vinegar (balsamic is good too)
Sprinkle of kosher salt and freshly ground black pepper

Instructions
  1. Place the chopped endive in a large bowl. Add the raisins, cheese, ham and chopped apple. Toss to combine.
  2. Drizzle olive over the salad. Drizzle cider vinegar over the salad. Toss to combine.
  3. Season to taste with a sprinkling of salt and pepper. Serve immediately.
