Hearty Chicken Salad with Avocado & Bacon 

​Makes: 2 servings
Preparation Time: 15 min
This salad packs a protein punch and is filled with a variety of vegetables. 
​3 cups romaine lettuce, chopped 
1 boneless skinless chicken breast, cooked 
2 hard cooked eggs, peeled and sliced   
1 red bell pepper, sliced    
1 tomato, cut into wedges    
60 mL sliced almonds, toasted    
2 slices bacon, cooked and chopped   
30 mL shredded cheddar cheese    
1 avocado, sliced (optional)    

Salad Dressing
2 Tbsp (30 mL) Olive oil 
1 Tbsp (15 mL) Balsamic Vinegar 
1 tsp (5 mL) grainy mustard 
1 tsp (5 mL) maple syrup or honey 
salt and pepper, to taste

Instructions

Step 1: Place lettuce in a large bowl and then top with chicken, eggs, red pepper, tomato, almonds, bacon and cheese. Top with avocado, if using.

Step 2: Combine all salad dressing ingredients in a glass jar with a lid. Shake well, and then pour over salad just before serving.
