Hummus 

Hummus is a Middle Eastern dip or spread made from cooked, mashed chickpeas blended with tahini, olive oil, lemon juice, salt and garlic. Hummus is a great source of protein and fibre and tastes delicious served with whole grain pita, crackers or veggies.

Ingredients 

2 cups of cooked chick peas
Juice of 1 lemon 
1 ½ Tablespoons tahini 
1 clove garlic, minced 
3 Tablespoons, Olive Oil 
¼ cup of water, plus more 
½ teaspoon of salt 


Direction 

1. Soak dried chickpeas overnight, and then boil for 1 hour. Rinse and drain. 

2. Transfer the chickpeas to a food processor or blender. Add lemon juice, tahini, olive oil, salt, garlic and water. 

3. Puree the mixture until smooth, stop to stir and add more water as needed until hummus reaches the desired consistency.
