Avocado Caprese Salad
1 cup cherry tomatoes, halved
50 g fresh mozzarella, chopped into bite size pieces
1/4 cup loosely packed fresh basil leaves, torn into small pieces
1/2 ripe avocado, cut into chunks
2 teaspoons extra virgin olive oil
2 teaspoons balsamic cream
Flaky sea salt and fresh cracked black pepper, to taste
Gently layer the tomatoes, mozzarella, basil, and avocado in a medium-sized bowl.
Drizzle with olive oil and balsamic, then season is salt and black pepper. Enjoy immediately.
