1 1/4 cups 100% whole wheat flour 1/2 cup dark or Dutch-processed cocoa powder 1 teaspoon baking powder 1/2 teaspoon baking soda 2 large ripe bananas, mashed 2 large eggs 1/2 cup light brown sugar 1/2 cup yogurt, plain 1 teaspoon vanilla extract 1/2 cup vegetable oil 50 g milk chocolate, cut into small peices
Preheat oven to 180 degrees C (with fan).
In a large bowl, mix together flour, cocoa powder, baking powder, baking soda, and set aside.
In a seperate bowl, mash bananas until mostly smooth. Add in the eggs, then add brown sugar, yogurt and vanilla and mix well to combine. Finally add in the vegetable oil and mix well.
Pour wet ingredients into bowl with dry ingredients and mix until just incorporated and no streaks of dry ingredients remain. Stir in chocolate pieces.
Spoon batter into non-stick muffin pan. Bake for 10-13 minutes minutes or until a knife inserted near the center comes out clean. Place pan on a wire cooling rack and let cool to lukewarm. Enjoy!
These may just be the best damn muffins you've ever tasted!
This recipe is based on a chocolate banana loaf recipe I found. I couldn't resist tweaking the recipe to make it a bit healthier. I replaced regular flour with 100% whole wheat and cut the sugar but half, replacing it with natual yogurt.
These muffins are chocolatey, moist and delicious. It's hard to have just one!
