Endive Salad with ham, apple and raisins
Makes 2 to 3 servings
Prep time: 10 minutes
INGREDIENTS
3 Endive heads, chopped
2 Tbsp raisins
100 g cooked ham, diced
100 g strong cheese such as gorgonzola or mature cheddar, chopped or crumbled
1 apple, cored and chopped
2 Tbsp olive oil
2 teaspoons cider vinegar (balsamic is good too)
Sprinkle of kosher salt and freshly ground black pepper

Instructions
- Place the chopped endive in a large bowl. Add the raisins, cheese, ham and chopped apple. Toss to combine.
- Drizzle olive over the salad. Drizzle cider vinegar over the salad. Toss to combine.
- Season to taste with a sprinkling of salt and pepper. Serve immediately.
