4 ripe avocados
1/2 cup red onion, diced finely
2 tomatoes, diced finely
1/4 - 1/2 cup cilantro leaves, chopped finely
1 lime, juiced
salt to taste
1. Cut avocados in half and remove pit. Save one pit. In a large bowl, scoop out flesh of avocado and mash with a fork.
2. Add the diced onion, tomatoes, and cilantro mix together with the avocados.
3. Add the lime juice and salt to taste.
4. If not serving right away place one of the avocado pits in the centre of the guacamole, cover with saran wrap and place in the fridge to chill. The pit will slow down oxidation which turns the guacamole brown.
