Heavenly meatballs in super topsecret tomato sauce
To say these meatballs are good would be an understatement. These meatballs are freaking delicious! Slow cooked in a rich tomato sauce, they are tender and delicious. - Keely
Meatballs 500 g ground beef 1 egg 1 carrot, grated finely 1/4 cup bread crumbs 1/4 cup milk fresh ground pepper
Instructions for Meatballs
Pre-heat oven to 160 C (with fan).
In a large bowl combine meat, egg, milk, carrot, bread crumbs and season with black pepper.
Using your hands combine the ingredients and roll into golf ball sized meatballs.
Place meatballs in a 9 x 11 pan and trasfer to the oven. Cook (uncovered) for 20 minutes.
While the meatballs are cooking you can start preparing the tomato sauce.
After 20 minutes, remove the meatballs from the oven. Reduce oven temperature to 150C. Drain the fat from the in the bottom of the pan. Remove the meatballs from the baking dish and nestle them into the tomato sauce (recipe below) and place in the oven for 1-2 hours.
Super Top Secret Tomato Sauce Just kidding- it's not a secret! I just think this sauce happens to be the secret to why these meatballs turn out so damn delicious!
In a large oven proof pot, heat olive oil over medium heat. Add onions, carrots, and celery. Sautee for about 10 minutes.
Gradually add beef stock a little at a time. As the vegetables cook, the liquid will reduce and you can add a bit more stock. Stir often and add the beef stock as needed to keep the vegetables from sticking to the bottom of the pan. Once the vegetables are tender, add the minced garlic and saute another 1-2 minutes.
Add the remaining beef stock, 2 cans of crushed tomatoes and oregano. Cover and reduce heat to medium low.
Allow tomato sauce to simmer for about 10-15 minutes, then remove from heat and nestle the meatballs one at a time into the sauce so they are completely covered.
Place the lid on the pot and transfer to the oven. Bake for 1-2 hrs at 150 C (with fan).
Remove from oven and serve with your favorite side dish.
