Melon Salad with
Mozzarella and Prosciutto
Ingredients
1/2 small cantaloupe 85 g prosciutto 250 g fresh mozzarella cheese 130 g bag mixed salad greens Fresh ground black pepper, to taste Vinaigrette 30 mL extra-virgin olive oil 15 mL white wine vinegar 5 mL minced shallots 5 mL honey or maple syrup pinch of salt |

Directions
- Mix vinegar, shallots, honey, and salt in a small bowl, stirring with a whisk. Slowly add olive oil, stirring constantly with a whisk.
- Cut the melon in half lengthwise; discard the seeds. Cut melon into quarters, remove the peel, and cut into cubes.
- Slice the mozzarella into bite-size chunks.
- Using a sharp knife, cut each slice of prosciutto into thirds.
- Arrange salad greens on a platter, top with melon, mozzarella, and prosciutto. Top with fresh ground black pepper.
- Drizzle vinaigrette over the salad and serve.
