There are certain recipes that carry the essence of cherished memories, transporting us back to simpler times with just one bite. For me, Morning Glory Muffins are not just a delicious treat but a heartwarming reminder of friendship and the nostalgia of childhood.

I first encountered these muffins in the most delightful way. My best friend of 37 years was the fortunate bearer of these incredible muffins, lovingly baked by her mom, an extraordinary baker whose kitchen was always filled with the irresistible aroma of freshly baked goods.

The first bite was always the best—a delightful medley of sweet carrots, tart apples, and the subtle crunch of coconut. Each muffin was a masterpiece, embodying a perfect balance of flavors and textures. They were moist, flavorful, and just sweet enough to feel like a treat without being overwhelming.

Years later, as an adult, I found myself reminiscing about those school days and the wonderful muffins that had become a fond memory. During one of our many catch-ups, I asked my friend if her mom still had the recipe. To my absolute delight, not only did she have it, but she shared it with me. Over the years, I have made a few updates of my own to this recipe to make it a bit more nutritious, but the essence remains the same.

Morning Glory Muffins

These Morning Glory Muffins are more than just a recipe; they are a slice of my childhood and a symbol of enduring friendship. Every bite is a nostalgic journey, a blend of sweet and savory, soft and crunchy, that brings back the warmth of those school days and the cherished memories with my best friend and her extraordinary mom. I hope you enjoy making and sharing these muffins, creating your own beautiful memories along the way.

​INGREDIENTS
​

1 cup all-purpose flour 
1 cup whole wheat flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/4 teaspoon salt

2 cups grated carrots (about 4 medium carrots)
1 apple, peeled, cored, and grated
1/2 cup shredded coconut (unsweetened)
1/2 cup raisins (optional)

3 large eggs
2/3 cup white sugar
1/3 cup sunflower oil
3/4 cup natural yogurt
​2 teaspoons vanilla extract

INSTRUCTIONS 

  1. Preheat your oven to 350°F (175°C). Line a standard 12-cup muffin tin with paper liners or grease the cups generously.
  2. In a large mixing bowl, whisk together the whole wheat flour, baking soda, cinnamon, and salt until well combined. This ensures that the leavening agents and spices are evenly distributed throughout the batter.
  3. In a separate bowl, beat the eggs with the white sugar, sunflower oil, natural yogurt, and vanilla extract. Mix until the ingredients are well incorporated and smooth.
  4.  Pour the wet mixture into the dry ingredients. Using a wooden spoon or spatula, stir gently until just combined. Be careful not to overmix; the batter should be slightly lumpy.
  5. Gently fold in the grated carrots, grated apple, shredded coconut, and raisins (if using). Ensure that the add-ins are evenly distributed throughout the batter for a consistent taste and texture in every bite.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full. This allows room for the muffins to rise without overflowing.
  7. Place the muffin tin in the preheated oven and bake for 16 minutes, or until a toothpick inserted into the center of a muffin comes out clean. The tops should be golden brown and slightly springy to the touch.
  8. Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature for a delightful morning treat.

  • Freshness Matters: Use fresh, high-quality ingredients for the best flavor and texture.
  • Uniform Grating: Ensure that the carrots and apple are grated uniformly to prevent uneven baking.
  • Storage: Store the muffins in an airtight container at room temperature for up to three days, or freeze for longer storage.
