Roasted Vegetable Pizza with Feta
Ingredients
1 small zucchini, sliced 1 can sliced mushrooms, rinsed and drained 1 yellow pepper, diced 1 red pepper, diced 4 sun-dried tomatoes packed in oil, drained, sliced 15 mL (1 Tbsp) olive oil 5 mL (1 tsp) Italian herb seasoning 125 mL tomato sauce 120g low-fat feta, crumbled 1/3 cup basil leaves, optional Need a pizza dough recipe? click here |
Directions
1. Preheat oven to 180°C (with fan). In a large baking tray (to fit vegetables in a single layer), peppers, zucchini, mushrooms and sun dried tomatoes with oil, then season. Roast for 15 minutes, then remove from the oven.
2. Increase oven temperature to 200°C. Wipe tray clean and roll out the pizza base and place it on the tray. Spread tomato sauce on base and top with roasted vegetables. Top with feta and bake for 15-20 minutes until feta is golden. Scatter basil over pizzas to serve.
