Raspberry Lemon Scones

Who doesn't love a homemade scone warm from the oven? This recipe is made with whole grain flour, natural yogurt and real butter. The flavour combination of raspberry and lemon together is a match made in heaven. This recipe is adapted from one of my all time favourite cookbooks Yum & Yummer written by Greta Podleski.   
Ingredients 
1 cup natural yogurt 
1 egg 
1/2 tsp vanilla extract 
3 Tbsp fresh squeezed lemon juice 
2 tsp grated lemon zest 
1 1/2 whole wheat flour 
3/4 cup all purpose flour 
1/4 cup sugar 
2 tsp baking powder 
1 tsp baking soda 
1/2 tsp sea salt 
1/4 cup frozen butter (57 g)
1 cup frozen raspberries 

Lemon Glaze (optional) 
1/2 cup confectioner's sugar 
1 Tbsp fresh lemon juice 
1 Tbsp butter 
1/2 tsp grated lemon zest 
Instructions 
  1. Preheat oven to 400 F (200 C with fan) 
  2. In a medium bowl, whisk together yogurt, egg, vanilla, lemon juice and zest. 
  3. In a large bowl, combine flour, baking powder, baking soda, sugar, and salt. Mix well. Using a box grater, shred the cold butter directly into the dry ingredients. Stir gently until the butter is evenly distributed into the flour mixture. 
  4. Add the wet ingredients into the bowl with the flour and stir until a soft dough forms. Be careful not to over mix. If your dough is too dry, add a bit of yogurt. If it's too wet, add a bit of flour. Gently fold in frozen raspberries.

5. Turn the dough onto parchment paper lined baking sheet that is lightly dusted with flour.  Divide dough in half and form each half into a ball. Pat each ball into a 1 inch thick circle, about 6 to 7 inches in diameter. Using a large sharp knife, cut each circle into 6 wedges. Separate the scones and transfer to a parchment lined baking sheet. ​

​6. Bake scones for about 15 minutes, until puffed and golden. Transfer scones to a wire rack to cool while you make the glaze. Combine glaze ingredients in a small bowl and mix well until very smooth. Once the scones have cooled, drizzle with glaze and enjoy! ​​
