This tzatziki recipe is rich and creamy, bursting with flavour. It makes the perfect dip or spread to serve along side grilled vegetables meats or salads.
Peel the cucumber and cut it lengthwise. Remove the seeds and discard. Grate the cucumber onto a piece of paper towel. Wrap the paper towel around the grated cucumber, squeeze out the moisture and discard.
In a medium size bowl, combine yogurt, grated cucumber, garlic and salt. Mix to combine, and then refrigerate until ready to serve.
Tastes great with grilled meats and salads or just as a dip on its own.
