 Banana Oatmeal Muffins 

I love pretty much anything made with oats, whether it's homemade granola or chocolate peanut butter granola bars, I'm all in.  These muffins are made with whole grain flour, oatmeal and bananas.  Perfect for school lunch box or a satisfying treat at home.

Recipe Makes: 12 muffins   
Cook Time: 14-16 minutes 
Difficulty: Easy Peasy
INGREDIENTS

3/4 cup whole wheat flour 
1/2 cup all purpose flour 
1/4 teaspoons baking powder 
1/2 teaspoon baking soda 
1/4 teaspoon salt 
​3/4 cup oats
3 super-ripe bananas, mashed 
2 eggs 
1/2 cup (100 g) brown sugar (not packed) 
1/4 cup (60 mL) vegetable oil (e.g. canola or sunflower)
1 teaspoon (5 mL) vanilla 
1/2 cup chocolate chips, raisins, or frozen blueberries (your choice)
INSTRUCTIONS

1. Preheat the oven to 375°F (190°C). 

2. Combine flour, baking powder, baking soda, and salt in a medium sized bowl. Mix well, then add the oatmeal and stir to combine. 

3. In a separate bowl, combine mashed bananas, oil, brown sugar, eggs, and vanilla. Using a fork, mix until well blended. Add the dry ingredients to the wet and stir gently until just combined. Gently fold in the chocolate chips, raisins or frozen blueberries.

4. Transfer batter to muffin molds. Bake for about 14-16 minutes or until a knife inserted into the centre of a muffin comes out clean. Cool on a wire rack.
