The Best Bran Muffins

Hearty and moist, these bran muffins are ​a yummy grab-and-go breakfast or snack. Easy to make, filled with fiber, and perfect with a cup of coffee.

The Best Bran Muffins

INGREDIENTS
​
1 1/2 cups (87 g) wheat bran 
2 tsp (10 mL) baking soda 
1/4 tsp salt 
6 Tbsp (75 g) sugar 
1 1/4 cups (156 g) all-purpose flour 
1 egg
1/4 cup (60 mL) molasses (black treacle) 
1 cup (250 mL) buttermilk* 
1/4 cup (60 mL) vegetable oil 
1/2 cup (120 mL) boiling water 
1/2 cup raisins, chocolate chips or blueberries (your choice) 

* You can make your own buttermilk by combining 1 cup of low fat milk with 1 Tbsp of white vinegar. Whisk together and let it sit for a few minutes. ​

Recipe Makes:  18 muffins 
Prep Time: 10 minutes
Cook Time: 16-17 minutes ​

Instructions 
  1. Preheat oven to 180 C (350 F). 
  2. In a large bowl, combine wheat bran, flour, baking soda, salt, sugar and all-purpose flour. Mix well. 
  3. Combine egg, molasses, buttermilk, oil, and water in a separate bowl. Whisk together. 
  4. Combine wet and dry ingredients in the same bowl, mix gently and then add raisins, chocolate chips, or blueberries. Continue mixing until everything is combined- careful not to over mix or your muffins will be tough. 
  5. Spoon batter into muffin cups and bake for about 16-17 minutes.


Helpful Hint 

You can make the batter for these muffins the night before. Let it sit in the fridge overnight then scoop the batter into muffin tins in the morning and bake. 

​Your house will be filled with the heavenly smell of warm muffins first thing in the morning, and your family will love you.
