The Best Bran Muffins
INGREDIENTS
1 1/2 cups (87 g) wheat bran 2 tsp (10 mL) baking soda 1/4 tsp salt 6 Tbsp (75 g) sugar 1 1/4 cups (156 g) all-purpose flour 1 egg 1/4 cup (60 mL) molasses (black treacle) 1 cup (250 mL) buttermilk* 1/4 cup (60 mL) vegetable oil 1/2 cup (120 mL) boiling water 1/2 cup raisins, chocolate chips or blueberries (your choice) * You can make your own buttermilk by combining 1 cup of low fat milk with 1 Tbsp of white vinegar. Whisk together and let it sit for a few minutes. |
