Cheesy Chicken Quesadilla
8 whole wheat tortillas
250 mL finely shredded cheese
500 g cooked boneless skinless
chicken breasts, sliced
Serve with guacamole & salsa for dipping
1. Place chicken on half of each tortilla; top with cheese. Fold tortillas in half to enclose filling.
2. Heat large heavy skillet sprayed with cooking spray on medium heat. Add quesadillas, 2 at a time; cook 4 to 5 min. on each side or until cheese is melted and quesadillas are lightly browned on both sides. Repeat with remaining quesadillas.
3. Cut quesadillas into wedges and serve with guacamole and salsa for dipping.
