This orzo salad is a fresh, delicious side dish that goes well with grilled meats, fish or poultry and is a satisfying vegetarian meal on its own. 

Fresh greens paired with a zesty lemon dressing, sweet cherry tomatoes, and salty feta offer bold contrast in textures and flavours that are sure to make your taste buds happy.

This salad is the perfect make-ahead dish for a potluck or entertaining. Add the fresh herbs at the last minute with an extra drizzle of dressing just before serving.

Orzo Salad with Cherry Tomatoes, Spinach and Feta



​INGREDIENTS
1 cup dry orzo pasta
1 medium zucchini, halved vertically and sliced 
1 medium red pepper, diced 
1 cup halved cherry tomatoes 
400 g cooked chickpeas, drained, and rinsed
4 oz feta cheese, cut into ¼-inch cubes 
2 cups fresh baby spinach, chopped roughly  
1/2 cup fresh mint leaves, chopped
Freshly ground black pepper


Zesty Lemon Dressing 

4 tablespoons olive oil 
1 tablespoon red wine vinegar
2 tablespoons fresh lemon juice
1 tablespoon maple syrup 
¼ teaspoon sea salt
fresh ground pepper to taste 


​Recipe Makes:  10 servings 
Prep Time: 15 minutes
Cook Time: 7 minutes ​

Instructions 

Bring a large pot of water to a boil. Prepare the orzo according to the package directions. Drain the orzo, and rinse with cold water. Toss with a drizzle of olive oil so it doesn’t stick together. 

Use a jar with a tight fitting lid to make the dressing. Combine olive oil, lemon juice, red wine vinegar, maple syrup, salt, and fresh ground pepper. Shake well to combine.

In a large bowl, toss together the cooked orzo, zucchini, tomatoes, chickpeas, feta, spinach, mint, and red pepper. 

Drizzle the dressing over the salad about 30 minutes before serving, and toss to coat.
