Sweet Potato Frittata with Goat Cheese

​​A frittata is basically just a quiche with no pants on. Together sweet potatoes and eggs make an unexpectedly delicious combination. Topped with tangy goat cheese, this frittata is a quick and easy vegetarian meal perfect served alongside a salad for brunch or dinner. 
​

Sweet Potato Frittata with Goat Cheese

​The ingredients and amounts in this recipe are a starting point. Feel free to tweak them to your own preferences or what you have waiting in the refrigerator.


​INGREDIENTS

​
500 g sweet potato, peeled, cut into 1 cm thick rounds
1 Tbsp (15 mL) olive oil 
2 cups spinach, washed and chopped roughly 
4 eggs 
4 green onions, sliced  
​150 g goat cheese 
pinch of salt 
​fresh ground pepper to taste

Prep Time: 10 minutes
Cook Time: 20 minutes ​

Instructions 
  1. Preheat oven to 180 C (350 F). 
  2. Place sweet potato slices in a pot of water. Bring to a boil. Reduce the heat and boil for 5-6 minutes. Gently lift the potato slices from the water with a slotted spoon. Transfer to a plate lined with a paper towel to rest.
  3. Heat olive oil over medium heat in a large non-stick pan. When the pan is hot, add the sweet potato slices. Cook for 2 minutes per side, then remove from the heat. 
  4. Transfer spinach and green onion to an oven-proof dish. Reserve a bit of the green onions for the garnish later. 
  5. In a large bowl, beat together the eggs. Add a pinch of salt and fresh ground pepper to taste. Pour the egg mixture over the spinach and green onions.
  6. Layer the sweet potato slices in rows, alternating potato slices with pieces of crumbled goat cheese. Crumble any remaining goat cheese over the top. 
  7. Transfer to the oven and bake for about 20 minutes.
  8. Garnish with fresh green onion.
