HERE'S WHAT YOU'LL NEED 
For this salad, you will need 1 head of red cabbage, pumpkin seeds, walnuts, one tart apple, balsamic vinegar, a bit of olive oil, feta, dried cranberries and fresh parsley.

Red Cabbage Salad with Apple and Feta  

Recipe Makes: 4 servings 
Prep Time: 20 minutes
Difficulty: easy peasy 
This vibrant salad is the perfect combination of seasonal sweet and savoury flavours.  With a satisfying crunch factor, red cabbage paired with tart granny smith apple, salty feta and sweet dried cranberries and nuts make this salad both nutritious and delicious.

​INGREDIENTS

​4 cups red cabbage, sliced thinly 
1 granny smith apple, cored and sliced thinly
1/4 cup pumpkin seeds 
1/4 cup walnuts, chopped 
1/4 cup dried cranberries 
handful of fresh parsley, chopped 
100 g feta, crumbled 



For the salad dressing 
​ 

3 Tablespoons olive oil 
3 Tablespoons balsamic vinegar
​1 teaspoon of maple syrup 
​salt & pepper to taste 



INSTRUCTIONS 

  1. In a large bowl, combine red cabbage, apple, walnuts, pumpkin seeds, dried cranberries and parsley. Toss to combine. 
  2. In a glass jar with a lid, combine olive oil, balsamic vinegar, maple syrup, salt and pepper. Seal with lid, and shake well to combine. 
  3. Just before serving, pour the dressing over the salad. Toss to ensure all ingredients are well coated. Top with crumbled feta, and enjoy!
