My Favourite Banana Bread 

This is my favourite banana bread recipe. The texture is super moist and this bread has a lovely buttery banana flavour.

​NUTRITION PER SERVING (1 slice; 1/12 recipe)

​INGREDIENTS

1 cup whole wheat flour 
1 cup all purpose flour 
2 teaspoons (10 mL) baking powder 
1 teaspoon (5 mL) baking soda 
1/2 teaspoon (5 mL) ground cinnamon 
1/4 teaspoon (2.5 mL) salt 
4 super-ripe bananas, mashed 
3/4 cup plain Greek yogurt (2% M.F.) 
1/2 cup (100 g) brown sugar (not packed) 
2 eggs 
1/4 cup (60 mL) unsalted butter, melted 
1 teaspoon (5 mL) vanilla 
INSTRUCTIONS

1. Preheat the oven to 350°F. Lightly oil the bottom and sides of a loaf pan with butter. Alternatively, line the pan with parchment paper. 

2. Combine the flours, baking powder, baking soda, cinnamon and salt in a medium sized bowl. Mix well and set aside. 

3. In a separate bowl, combine mashed bananas, yogurt, sugar, eggs, melted butter and vanilla. Using a whisk, mix until well blended. Add the dry ingredients to the wet and stir gently until just combined. 

4. Transfer batter to loaf pan. Bake for 35-40 minutes or until a knife inserted into the centre of the loaf comes out clean. Cook on a wire rack.
